Structured foraging training aimed at instructors, leaders and those who want to take their foraging seriously

Our foraging course has been by far our most popular public skills course for a decade now. Alongside those public course dates we have been training chefs, outdoor instructors and group leaders in the basic skills of foraging – plant and fungi identification, use of guidebooks, how to use and process plants and the laws that cover foraging and the picking of wild plants in the UK. We have also covered the acquisition of wild protein – both inland and on the coast, including shooting, fishing and how to cook and prepare what you gather.

When we started to formalise this private training with the EST Framework in 2017 it was clear that we needed to make foraging and wild food courses part of it. Throughout 2018 we ran courses under the EST Framework ‘Wild Food’ training stream, working with groups of instructors, chefs and those who wanted to take their wild food seriously. These were all private bookings for the organisations and businesses that we work with through Outdoor Professional.

In 2019 we are now offering these courses to the general public, starting with the Level One (entry-level) courses. These courses need no additional experience or training, but will go through the basics of learning about foraging, wild food and how to start to share that information with others.

These courses are certificated under the EST Framework.

The Level One Inland Foraging Basics course from Original Outdoors is a 1-day professional-level foraging course run in the Clwydian Range AONB.

Course Content

  • Identification of common and safe edible wild plants, trees and fungi
  • Foraging throughout the seasons
  • Identification of common toxic or dangerous species
  • Use of foraging guidebooks and information resources
  • UK foraging laws and ethical considerations
  • Equipment choice and use (including guidebooks and harvesting equipment)
  • Advice for developing lesson plans and sharing knowledge
  • The laws on carrying knives and edged tools in the U.K.
  • An overview on shooting and fishing laws in the U.K.
  • Staying safe when foraging
professional coastal foraging

The Level One Coastal Foraging Basics course from Original Outdoors is a 1-day professional-level coastal foraging course on the coast of Anglesey in North Wales.

Course Content

  • Identification of common and safe edible wild plants, seaweeds, seafoods (molluscs/gastropods/crustaceans)
  • Foraging throughout the seasons
  • Tidal cycles (include Spring Tides)
  • Identification of common toxic or dangerous species
  • Use of foraging guidebooks and information resources
  • UK coastal foraging laws and ethical considerations
  • Equipment choice and use (including guidebooks and harvesting equipment)
  • Advice for developing lesson plans and sharing knowledge
  • The laws on carrying knives and edged tools in the U.K.
  • An overview on coastal fishing laws in the U.K.
  • Basic fishing techniques and awareness
  • Staying safe when foraging
